I can’t claim this as my own, but don’t remember where I got the recipe. I have it in my silverware drawer to its easy to grab and make when I’m in a rush.
This muffin is gluten free and dairy free (if you choose an oil over butter).
Cook, cut, then grill or toast for that English muffin taste and texture.
Ingredients:
1 egg
2 tsp coconut flour
Pinch baking soda
Pinch salt
Directions:
mix all ingredients in separate dish – grease small cup or ramakin – pour into cup/ramakin – microwave on high for 60-90 seconds
Take out of cup/ramakin, cut in half and enjoy – I like to toast it or cook in a skillet just to get it crispy for a more bread like texture. Works great for breakfast sandwiches or with nut butters.
