Make Ahead Egg Cups

Mornings always rushed? Need a quick grab and go snack? These Egg Cups are portable, packed with nutrients and easy to make!!

 

What you’ll need:

Muffin Tin

18 Eggs

Bacon/Canadian bacon rounds/other meat rounds

Butter/Lard/Avocado Oil

Desired Vegetables (any combination) such as:

Spinach

Mushrooms

Bell Peppers

Onion

Garlic

Broccoli

Asparagus

Etc.

 

Instructions:

Pre-heat oven to 375°

Heavily grease the muffin tins with butter, lard or avocado oil

Line each muffin tin with bacon or a piece of meat round (i.e. Canadian Bacon)

Put in desired veggies

Crack one egg in each cup

Season with salt, pepper, garlic, onion, cayenne, etc.

Sprinkle cheese on top

Bake 20 minutes or until a knife comes out of center clean

 

Store in refrigerator in container with a paper towel to absorb excess moisture
